I think most of us make a little extra turkey every Thanksgiving as we are looking forward to those nice turkey sandwiches the next day but what do you do when you have more left over turkey then you know what to do with. You make a nice comforting creamy rice dish that is simple and economical to eat. You could also use chicken for this dish and it is a wonderful way to use up left over chicken too. This is a one dish meal.
Creamy Turkey and Rice
Cook 2 1/2 cups of rice either by stove top or rice cooker
1 12 oz can peas
1 10 3/4 can of cream of mushroom soup
1/2 cup milk
1/2 teaspoon sea salt
1 pinch black pepper
1 1/2 to 2 cups of cooked turkey or chicken
1 tablespoon of mayonnaise
1 teaspoon of curry powder
1/4 cup of chopped pimiento or red pepper
option: Shredded cheddar cheese
Remove the liquid from the peas. Pour the mushroom soup in to a large frying pan, and add the milk and mayonnaise. Begin cooking on medium heat gently stirring the milk in to the soup, add the turkey or chicken to the soup mix and add the salt and pepper and curry powder, stir everything together and add in the rice and stir through and top with the peas and pimento or red pepper. Stir gently so you don’t smash the peas. Heat through and serve immediately and optionally sprinkle with shredded cheddar cheese.
